Cucumber Melon Salad with Feta

This dish made mostly with melon and cucumbers makes it an incredibly hydrating and refreshing salad! Add in the feta, mint leaves, and fresh lime juice, and you have yourself a sweet and savory, healthy, and delicious salad!
Ingredients:
- 2 cups cantaloupe melon, skin removed + cut into chunks (or spooned into balls)
- 2 cups cucumber, chopped into half-moons
- 1/2 cup feta cheese, crumbled
- 15 large fresh mint leaves, torn or chopped
- 1 Tbsp olive oil
- 1 lime, juice only (optional. The salad is delicious with or without the lime!)
- Salt + pepper, to taste
Instructions:
- Prep all ingredients and add to a large serving bowl. Toss everything together well, adjusting seasonings as desired.
- Serve immediately, or chill for 30 minutes before serving!
