Cranberry, Walnut, Dark Chocolate & Coconut Pancakes

A bright and festive way to start your Thanksgiving day
Ingredients:
- Preferred pancake mix
- Approximately (add more or less depending on how much you love the following):
- 1/4 cup crushed walnuts
- 1/4 cup dried and chopped cranberries
- 1/4 cup dark chocolate chips
- 1/4 cup shaved coconut flakes
- Local maple syrup (optional)
- Coconut whip cream (optional)
Instructions:
- In a large mixing bowl add all ingredients from packaged pancake mix (or make your own from scratch)
- Add walnuts, cranberries, coconut flakes and chocolate chips. Mix these in to your pancake batter.
- Add pancake batter to warm griddle. Flip when you begin to notice bubbles.
- When pancakes are cooked through (follow directions on boxed mix) plate.
- Optional – Serve with local maple syrup and a dollop of coconut whip cream and sprinkle some additional coconut flakes too!
