In keeping with our recent trend of sharing Monday’s Menu recipes celebrating different foodie days, today we prepare to celebrate World Pasta Day on October 25th! This recipe does take longer than recipes we normally share for Monday’s Menu. The piece that will take the most of your time is roasting the pumpkin; you should put aside 2-3 hours for this piece of the culinary puzzle.

Despite how long this meal takes to prep there are things to consider. First, 10/25 is a Friday this year, so this recipe might just be a delightful meal in with friends and family! In celebrating World Pasta Day, this recipe makes pasta a key ingredient, while uplifting a local seasonal favorite: pumpkin. Pasta, pumpkin with a splash of herbs and cheese – what’s not to love?!
