Vegan Christmas Cookies

Technically this recipe is titled “Vegan Christmas Cookies”, so while we’re either late, or really early we’re sharing this recipe this week for two reasons. First, it’s the last Monday in Veganuary and to wrap up we are sharing a recipe that offers a sweet treat. Secondly, with Valentine’s Day coming up, this recipe can be easily modified to heart shaped cookies and red, pink, and white frostings.
